Broccoli and Feta Omelette Roll Recipe

Ingredients

  • 4 large eggs
  • 1/2 broccoli flowr (florets), finely chopped
  • 100 gram (1/2 cup) crumbled feta cheese
  • 1/4 cup diced red bell pepper
  • 2 tablespoons chopped fresh parsley or basil
  • Salt and pepper to taste
  • Olive oil or cooking spray
  1. Preheat Oven: to 175°C. Line a baking sheet with parchment paper.
  2. Prepare Broccoli Mixture: In a bowl, combine the finely chopped broccoli, crumbled feta cheese, diced red bell pepper, chopped parsley or basil, salt, and pepper. Mix well and set aside.
  3. Prepare Omelette: In another bowl, beat the eggs until well blended. Season with a pinch of salt and pepper.
  4. Cook Omelette: Heat a non-stick skillet over medium heat and lightly grease it with olive oil or cooking spray.
  5. Add Broccoli Mixture: Once the omelette starts to set but is still slightly runny on top, spread the broccoli and feta mixture evenly over the surface of the omelette.
  6. Roll the Omelette: Using a spatula, gently roll the omelette from one side towards the other, creating a rolled shape.
