Broccoli and Feta Omelette Roll Recipe

Ingredients
- 4 large eggs
- 1/2 broccoli flowr (florets), finely chopped
- 100 gram (1/2 cup) crumbled feta cheese
- 1/4 cup diced red bell pepper
- 2 tablespoons chopped fresh parsley or basil
- Salt and pepper to taste
- Olive oil or cooking spray
- Preheat Oven: to 175°C. Line a baking sheet with parchment paper.
- Prepare Broccoli Mixture: In a bowl, combine the finely chopped broccoli, crumbled feta cheese, diced red bell pepper, chopped parsley or basil, salt, and pepper. Mix well and set aside.
- Prepare Omelette: In another bowl, beat the eggs until well blended. Season with a pinch of salt and pepper.
